The petty knife is a small all-purpose knife used in professional kitchens for peeling, shaping, cutting fruit, vegetables or cheese, chopping herbs and garnishing.

GINGAMI #3
Gingami #3 (or silver paper steel) is one of the Yasugi steels with 14 per cent added chromium. Its edge retention is slightly inferior to that of Shirogami #1, but the fact that it has the character of a carbon steel and is stainless at the same time makes it a good choice for anyone who wants a knife made of Japanese carbon steel that is easy to maintain.
Another reason why professional chefs opt for Gingami #3 steel: It is excellent for resharpening by hand with whetstones.
The Neo-Classic Nashiji finish also gives the series an irresistible appeal.

The Japanese term "Nashiji" ("pear skin pattern") refers to the result of a technique that makes the surface of a blade appear unfinished and rustic.
