SHIROGAMI #1
Shirogami #1 (or white paper steel) has many similarities to the Aogami, but is an unalloyed, pure carbon steel. This allows it to be honed to an exceptional sharpness. It has very good edge retention and working hardness. In contrast to Aogami, Shirogami #1 lacks the chromium content, which makes it more susceptible to oxidation. This means that the knife will rust if it is not cared for.
MIGAKI
The knives in the Migaki line have a beautiful cutting edge geometry and are quite thin behind the edge and on the spine. They provide an excellent cutting feel, are lightweight and feel very nimble and comfortable in the hand.
The cutting edge is forged from carbon steel and plated with stainless steel. The side is made of stainless steel, very hygienic.
