DID YOU KNOW? ...
Bonito flakes (鰹節) are obtained from the real bonito (Katsuwonus pelamis), a relative of the tuna. The meticulous process includes drying and smoking, followed by a wafer-thin slicing, which brings out the unique texture and flavour intensity of the flakes.
