GINGAMI #3
Gingami #3 (or silver paper steel) is one of the Yasugi steels with 14 per cent added chromium. Its edge retention is slightly inferior to that of Shirogami #1, but the fact that it has the character of a carbon steel and is stainless at the same time makes it a good choice for anyone who wants a knife made of Japanese carbon steel that is easy to maintain.
